Stuffed Bell Peppers

Ingredients

  • 1 lb ground turkey
  • 1 lb lean ground beef
  • 1 large zucchini diced
  • 1/4 head green cabbage diced
  • 4 scallions chopped fine
  • 6 bell peppers seeded

Instructions

Prepare the meat and vegetable mixture

  • Brown Turkey in a tablespoon of olive oil.
  • When Turkey is half way cooked put in the ground beef.
  • Add the zucchini, cabbage, scallions plus season garlic, salt and pepper.
  • 2/3 chicken or beef broth to keep from drying out.
  • When vegetables are still a little crunchy drain the meat.

Preparing the bell peppers

  • Take the peppers cut the tops off and clean out.
  • Microwave for 3 minutes on high

Putting it all together

  • Stuff peppers with meat mixture. Place in an oven safe dish
  • Bake at 350, uncovered for 35 minutes
  • When you remove them from the oven each person can use the Walden's Farm BBQ dressing and the Ketchup. Together they make a fantastic stuff Bell pepper
