Ingredients
- 3 cups fresh baby spinach (about 3–4 big handfuls)
- ¾–1 cup sliced fresh strawberries (5–7 medium strawberries)
- 2 tablespoons chopped walnuts or pecans (about 10–12 nut halves)
- 2–3 thin slices of red onion (or to taste)
- 1–2 tablespoons crumbled feta cheese (optional)
Lighter Homemade Vinaigrette (for 1 salad)
- 1 tablespoon olive oil (reduced from 1½ tbsp)
- 2 teaspoons apple cider vinegar
- ½ teaspoon Dijon mustard
- ½–¾ teaspoon honey or sugar-free sweetener
- Salt & pepper to taste
Directions
- Place the spinach in a large individual salad bowl.
- Top with the sliced strawberries, chopped nuts, red onion slices, and crumbled feta (if using).
- In a small jar or bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, stevia or monk fruit sweetener, salt, and pepper until well combined.
- Drizzle the vinaigrette over the salad (start with about ¾ of it and add more if desired).
- Toss gently to coat everything evenly and enjoy!
