Strawberry Spinach Vinaigrette Salad

Ingredients

  • 3 cups fresh baby spinach (about 3–4 big handfuls)
  • ¾–1 cup sliced fresh strawberries (5–7 medium strawberries)
  • 2 tablespoons chopped walnuts or pecans (about 10–12 nut halves)
  • 2–3 thin slices of red onion (or to taste)
  • 1–2 tablespoons crumbled feta cheese (optional)

Lighter Homemade Vinaigrette (for 1 salad)

  • 1 tablespoon olive oil (reduced from 1½ tbsp)
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon Dijon mustard
  • ½–¾ teaspoon honey or sugar-free sweetener
  • Salt & pepper to taste

Directions

  1. Place the spinach in a large individual salad bowl.
  2. Top with the sliced strawberries, chopped nuts, red onion slices, and crumbled feta (if using).
  3. In a small jar or bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, stevia or monk fruit sweetener, salt, and pepper until well combined.
  4. Drizzle the vinaigrette over the salad (start with about ¾ of it and add more if desired).
  5. Toss gently to coat everything evenly and enjoy!
