Ingredients

  • ¼ cup cauliflower rice or hearts of palm rice (optional)
  • 1 tablespoon olive oil
  • Juice of ½ lemon
  • Oregano, salt, and pepper to taste

Directions

  1. If using hearts of palm rice, use it directly from the package or warm it briefly if desired.
  2. Arrange the romaine, vegetables, and optional cauliflower or hearts of palm rice in a bowl.
  3. Top with the grilled chicken, avocado, and feta cheese.
  4. Drizzle with olive oil and fresh lemon juice.
  5. Sprinkle with oregano, salt, and pepper, then toss gently before serving.
