Herb Stuffed Zuchinni Boats
Prep Steps –
- Preheat over to 425 degrees
Course – Side Dish
Cook Time – 30 minutes
Ingredients
- 1 Bag ITG White Cheddar Crisps
- 2 Medium Zucchini can use Summer Squash
- 1 Medium Tomato can use cherry tomatoes
- 1 Bunch Parsley small bunch
- 1 Basil leave
- 1 Teaspoon Dill
- 1 Clove Garlic (minced)
- 2 Tablespoons Olive Oil
Instructions –
Zucchini or Summer Squash

Split Medium Zucchini or Summer Squash lengthwise

Scoop out seeds

Season with salt & Pepper to taste
Tomato Herb Mixture

Crush White Cheddar Crisps

Chop tomatoes

Combine crushed White Cheddar Crisps, tomato, herbs, 1 minced garlic clove, 2 tablespoons olive oil, and salt and pepper
Putting it all together

Spoon the tomato herb mixture into the zucchini; drizzle with olive oil

Bake at 425 degrees F for 25 to 30 minutes
