Herb Stuffed Zuchinni Boats

Prep Steps –

  • Preheat over to 425 degrees

Ingredients

  • 1 Bag ITG White Cheddar Crisps
  • 2 Medium Zucchini can use Summer Squash
  • 1 Medium Tomato can use cherry tomatoes
  • 1 Bunch Parsley small bunch
  • 1 Basil leave
  • 1 Teaspoon Dill
  • 1 Clove Garlic (minced)
  • 2 Tablespoons Olive Oil

Instructions –

Zucchini or Summer Squash

  • Split Medium Zucchini or Summer Squash lengthwise
  • Scoop out seeds
  • Season with salt & Pepper to taste

Tomato Herb Mixture

  • Crush White Cheddar Crisps
  • Chop tomatoes
  • Combine crushed White Cheddar Crisps, tomato, herbs, 1 minced garlic clove, 2 tablespoons olive oil, and salt and pepper

Putting it all together

  • Spoon the tomato herb mixture into the zucchini; drizzle with olive oil
  • Bake at 425 degrees F for 25 to 30 minutes
